The Ultimate Guide to Keeping Your Gourmet Mushrooms Fresh

Gourmet mushrooms, such as lions mane, chestnuts, and oyster mushrooms, bring exceptional flavors and textures to your culinary creations. However, their delicate nature requires special care to ensure they remain fresh and delicious. Here’s how to store your gourmet mushrooms to maintain their peak quality.

Choose the Right Container

Mushrooms need to breathe to stay fresh. Avoid plastic bags or airtight containers that can trap moisture and lead to spoilage. Instead, opt for:

  • Paper Bags: These allow for air circulation while preventing excess moisture buildup.

  • Cloth Bags: A great alternative, cloth bags also promote airflow.

  • Southern Mushroom Company Original Packaging: If your mushrooms came in our custom compostable ventilated container, you can store them as-is to ensure proper ventilation and add to your garden when you’re done!

Optimal Storage Temperature

Keep your mushrooms in the refrigerator, but avoid the crisper drawer, which can be too humid. The ideal storage temperature for gourmet mushrooms is between 34°F and 38°F (1°C and 3°C). This range keeps them cool enough to stay fresh without freezing.

How long can they last?

Our mushrooms vary by variety for longevity once in the fridge. You can rest assure that our mushrooms are picked at PEAK freshness, and sometimes even just prior which means we may sacrifice some weight for market, but we ensure you have the longest storage range possible for your fresh mushrooms! Our last anywhere from 3 days to 2 weeks depending on variety. You’ll be able to tell if your mushrooms are declining by smell, look and texture.

Handling and Preparation

  • Cleaning: Because we grow our mushrooms in a controlled environment, you won’t have to clean off any dirt, soil or bugs! Additionally, we don’t spray our mushrooms or use any pesticide of any kind so you can go straight from our farm to your plate without worrying about the hassle of cleaning!

Regular Checks and Use

Check your stored mushrooms regularly for signs of spoilage, such as discoloration, an off smell, or a slimy texture. Use older mushrooms first and promptly remove any spoiled ones to prevent them from affecting the rest.

Bonus Preservation Methods

If you have more mushrooms than you can use within a few days, consider these preservation methods:

  • Drying: Use a food dehydrator to dry your mushrooms. Typically 165 for anywhere from 8-24 hours does the trick! We like to dry ours “cracker dry” so once dried, they snap like a cracker. Once dried, store them in an airtight container in a cool, dark place. Rehydrate by soaking in warm water before use.
